How Cooking Equipment Repair Works

What to expect from the moment you call until your line is cooking again.

Call or Request Online

Call 508-419-9010 or request service online. Tell us what the unit is, whether it’s gas or electric, and what it’s doing: won’t light, won’t hold temperature, throwing a code. If you smell gas, shut off the gas to that unit before you call, and tell dispatch first thing.

Rapid Dispatch

Dispatch sends a technician who covers your town, not one driving in from off Cape. A fryer down in Sandwich before a Friday fish fry or a range out in Falmouth before Sunday brunch gets a local technician, and emergencies are prioritized over routine calls.

Diagnose & Repair

The technician finds the root cause, whether it’s a failed thermocouple, a clogged burner port or a combi oven sensor, and repairs it with parts from the van when they’re stocked. If a part has to be ordered, you’ll know what it is and when it’s expected before the technician leaves your kitchen.

Test, Document, & Follow Up

Each unit is run under real conditions, burners lit and thermostats checked against actual temperature, before sign off. The work is documented for your records and backed by Harris Warren’s 90 day parts and labor guarantee. If the same problem returns, we come back.

Highly Skilled Technicians

Harris Warren technicians train through Tech24 University on gas, electric and steam equipment, and keep learning in the field with live video support from senior experts when they meet an unfamiliar fault.

We Stock the Most Commonly Used Parts

Our vans carry the parts cooking equipment burns through most: thermocouples, igniters, thermostats, gas valves, heating elements and gaskets. Factory specification parts keep your warranty intact and your repair on the first visit when the part is on hand.

90-Day Guarantee

Every repair is backed by Harris-Warren’s 90-day guarantee on parts and labor. If the same problem returns within 90 days, we come back and fix it at no charge.

Planned Maintenance Programs

A maintenance visit can cover burner and element inspection, thermostat calibration, gas pressure testing, gasket checks and cleaning, scheduled around your season so the line is ready before the rush.

All Fuel Types & Configurations

Natural gas, propane and electric, including the propane equipment common in Cape kitchens without a gas main. Our technicians work on atmospheric and infrared burners and everything from vintage ranges to the latest combi ovens.

Cape Cod And Plymouth County Coverage

Since 1987, Harris Warren has served cooking equipment across all of Barnstable and Plymouth Counties from West Yarmouth, with technicians who live in the communities they cover, from Wellfleet and Harwich Port to Wareham and Plymouth.

What should I do if I smell gas near my range or fryer?

EMERGENCY: SHUT OFF GAS TO THE UNIT

URGENCYLIKELY CAUSES

Critical

A gas smell usually means a leak at a valve, fitting or flexible connector, often loosened when equipment on casters is pulled out for cleaning. Shut off the gas to the unit and don’t use it. If the smell is strong or spreading, evacuate and call the gas utility or 911, then call us for the repair.
Why is my conveyor pizza oven belt stopping or cooking unevenly?
URGENCYLIKELY CAUSES

High

A worn drive motor, a stretched or damaged belt, or a failing blower that leaves hot and cold zones. A stopped belt burns whatever is inside and shuts down your pizza line. Don’t keep restarting it; call so the drive can be repaired before the motor fails outright.
Why does my fryer pilot keep going out when the back door is open?
URGENCYLIKELY CAUSES

High

A failing thermocouple is the usual cause, but drafts make it worse. When summer doors are propped open or the kitchen’s exhaust pulls more air than the make up air supplies, the pilot gets blown out. Each outage stops the fryer mid rush. We can check the fryer and the air balance on the same visit.
Why is my char broiler or griddle hotter on one side?
URGENCYLIKELY CAUSES

Medium

Grease clogged burner ports, corroded burner tubes or a thermostat out of calibration on a thermostatic griddle. Cooks end up working around cold spots, which slows every order and overcooks product on the hot side. A burner cleaning and calibration usually fixes it.
Why is my combi oven throwing error codes?
URGENCYLIKELY CAUSES

Medium

Usually a failed core probe, boiler scale, a fan motor fault or a clogged water filter. Many combis will keep running in a limited mode, which hides the problem until the steam function quits entirely. Note the code number before you call; it tells the technician which parts to bring.
Why is my steamer or steam kettle slow to come up to temperature?
URGENCYLIKELY CAUSES

Medium

Mineral scale in the boiler or steam generator, a failing water level probe or skipped blowdowns. Scale insulates the heating surface, so the unit works harder and heats slower. For kitchens steaming seafood or holding chowder all day, slow recovery means longer ticket times. Schedule a descaling before peak season.
Why is my fryer oil breaking down so fast in summer?
URGENCYLIKELY CAUSES

Medium

Heavy breaded seafood, crumbs left in the vat and a filtration system that’s not pumping properly all shorten oil life, and a thermostat running hot makes it worse. Oil is one of a fryer’s biggest running costs, so a few extra dumps a week add up quickly. Have the thermostat and filter pump checked.
Why won't my oven door seal tightly anymore?
URGENCYLIKELY CAUSES

Low

A worn gasket, a bent hinge or a failing latch. Heat escapes around the door, so the oven runs longer, uses more gas and cooks unevenly near the front. It’s rarely an emergency, but it gets worse. Add it to your next maintenance visit.

COMMON QUESTIONS

Cooking Equipment Repair FAQ

Everything you need to know about Harris Warren Commercial Kitchen Service's commercial cooking equipment repair services.

Do you offer commercial kitchen appliance repair in West Yarmouth and across Cape Cod?

Yes. Harris Warren provides commercial kitchen appliance repair from its West Yarmouth office across all of Barnstable and Plymouth Counties. That includes Hyannis, Dennis, Mashpee, Falmouth, Sandwich and Harwich Port, plus Wareham and Plymouth across the Cape Cod Canal.

For operators with locations beyond those two counties, Harris Warren is part of Tech24, whose network can coordinate service in other markets so you keep one point of contact.

Which cooking equipment brands can Harris Warren service?

Harris Warren services equipment from 44 manufacturers, including cooking brands such as Vulcan, Southbend, Royal Range, MagiKitch’n, Doyon, Moffat, Merrychef, Ovention, Equipex and Vollrath. That covers ranges, fryers, broilers, convection, combi and rapid cook ovens.

If your equipment is from another brand, call anyway. Our technicians work on equipment from many more manufacturers than our authorized list, including older units that have been on the line for decades.

Should I repair or replace an older fryer?

Repair when the fryer is sound and the fault is a thermostat, thermocouple or gas valve. Replace when the fry pot is cracked or leaking, or repairs keep coming back. A common rule of thumb is to replace when one repair nears half the cost of a new unit.

Efficiency matters too. ENERGY STAR reports that certified commercial fryers use about 30 percent less energy than standard models. Because Harris Warren sells and installs new equipment, your technician can price both options on the same visit.

What should a seasonal restaurant check before firing up the cooking line?

Have every gas connection leak tested, pilots and igniters checked, thermostats calibrated and fryer filtration run before opening. Equipment that sat idle through a Cape Cod winter often has corroded thermocouples, dried gaskets and debris in burner ports.

Also check the exhaust hood and make up air. A hood that won’t pull, or a building that can’t supply enough fresh air, causes smoky kitchens and fryer pilot outages. Harris Warren services both the cooking equipment and the HVAC, so one visit covers the line and the air.

How often should a busy restaurant have its cooking equipment maintained?

It depends on volume. Many high volume restaurants schedule maintenance quarterly, while lighter use kitchens may need it twice a year. Seasonal Cape Cod restaurants often do one visit before opening and one mid season, when equipment is working hardest.

Fryers and griddles need the most attention because grease and constant heat wear parts fastest. A maintenance plan built around your menu and hours catches worn thermostats and gaskets before they fail on a Saturday night.

How fast can Harris Warren respond to a cooking equipment emergency?

Emergency calls reach a live dispatcher 24/7, and Harris Warren prioritizes them by urgency, sending a technician who covers your town. Because technicians live across Barnstable and Plymouth Counties, the nearest one is usually already on your side of the canal.

If you smell gas, shut off the gas to the unit before you call. For anything else, have the make, model and what the unit is doing ready; it helps the technician bring the right parts on the first trip.
