How Bakery Equipment Repair Works

Here’s what happens from the moment you call to the moment your oven is back up to temperature.

Call or Request Online

Call 508-419-9010 or submit a request online. Tell us the equipment, the make and model if you have it, what it’s doing and how urgent it is. A proofer acting up at 3 a.m. before a holiday weekend is a different priority from a slicer that needs new blades, and we schedule accordingly.

Rapid Dispatch

Our technicians live and work across Barnstable and Plymouth Counties, so the one sent to you is usually already on your side of the Cape Cod Canal. In summer, when traffic backs up at the bridges and along Route 28, that local base matters. Emergency calls go to the front of the line.

Diagnose & Repair

Your technician diagnoses the fault on site, whether it’s a failed igniter, a worn mixer bearing or a proofer humidity control, and repairs it with parts from the van when they’re in stock. If a part has to be ordered, you’ll hear what it is and when it’s expected before the technician leaves.

Test, Document, & Follow Up

Every repair is tested under real conditions, such as a full bake cycle or a loaded mixer, before the technician signs off, and the work is documented for your records. Repairs are backed by Harris Warren’s 90 day parts and labor guarantee, so if the same issue returns, we come back.

Highly Skilled Technicians

Harris Warren technicians train through Tech24 University on a CFESA based curriculum covering gas, electric and steam equipment. Bakery work draws on all three, and a technician who understands combustion, controls and refrigeration can fix the oven and the retarder on the same visit.

We Stock the Most Commonly Used Parts

Our vans carry the parts that fail most on bakery equipment, including thermostats, igniters, heating elements, belts and door gaskets. Using factory specification parts protects your warranty and keeps a two hour repair from turning into a two day wait.

90-Day Guarantee

Every repair is backed by Harris Warren’s 90 day parts and labor guarantee. If the same problem comes back within 90 days, we return and make it right at no charge.

Planned Maintenance Programs

A maintenance plan built around your production calendar can include oven calibration, mixer gearbox and bearing checks, proofer humidity testing, gasket replacement and cleaning. For seasonal bakeries, a spring startup visit catches winter damage before opening day.

All Fuel Types & Configurations

Gas, electric and steam injected ovens, from modern combi ovens to decades old revolving tray ovens still turning out bread in village bakeries. Harris Warren services equipment from 44 manufacturers across deck, rack, rotary and convection configurations.

Cape Cod And Plymouth County Coverage

From a single bakery in Falmouth to several locations between Hyannis and Plymouth, Harris Warren covers every bakery across Barnstable and Plymouth Counties from our West Yarmouth office, with one number to call for all of them.

Why is my rack oven's rotation stopping mid bake?
URGENCYLIKELY CAUSES

High

A worn rack lift, a failing rotation motor or a broken coupling in the drive. When the rack stops turning, the side facing the heat source burns while the back stays underbaked. Every stalled load is a full rack of product lost. Don’t keep restarting it; call so the drive can be checked before it fails completely.
Why is my retarder icing up or failing to hold dough overnight?
URGENCYLIKELY CAUSES

High

Torn door gaskets, a failed defrost timer or condenser coils clogged or corroded by salt air near the coast. The retarder keeps running but can’t hold temperature. You find out at 4 a.m. when an entire night’s dough has overproofed. Have the coils and gaskets inspected at least before peak season.
Why does my mixer trip or smell hot during a double batch?
URGENCYLIKELY CAUSES

High

Worn motor bearings, low gear oil or a bowl loaded past its rated capacity with stiff dough. Summer volume pushes mixers to run longer and heavier than they do all winter. A motor that keeps overheating can burn out entirely, taking the mixer out of service for days while parts are sourced. Stop and call at the first hot smell.
Why won't my deck oven hold temperature after sitting closed all winter?
URGENCYLIKELY CAUSES

High

Months of cold, damp storage are hard on burners and controls. Igniters and thermocouples corrode, door gaskets dry out and thermostats drift, so the oven reads right but bakes unevenly. Left alone, it means pale bottoms, burnt tops and a first busy weekend of wasted product. Book a startup check before your opening date.
Why is my bakery display case fogging up or sweating in July?
URGENCYLIKELY CAUSES

Medium

Failed anti sweat heaters in the glass, worn door gaskets or a case set too cold for summer humidity. Condensation hides your product from customers and drips onto pastries, and a case that’s working too hard can ice its coil. Call before it affects your front counter.
Why are my donuts browning outside but raw inside?
URGENCYLIKELY CAUSES

Medium

The fryer is running hotter than its setting, usually from a thermostat out of calibration or a failing high limit control. Broken down shortening makes it worse. Beyond wasted batches, an overheating fryer is a fire risk. Turn it off if temperatures spike and book a calibration.
Why is my proofer overshooting humidity and leaving dough slack?
URGENCYLIKELY CAUSES

Medium

Usually a failed humidity sensor, a sticking water solenoid or scale building up in the steam generator. Humid summer air on the Cape makes an already wet proofer harder to control. Overproofed, slack dough collapses in the oven, and a full rack can be lost in one cycle. Call before the next production run.
Why is my bread slicer tearing loaves instead of cutting them?
URGENCYLIKELY CAUSES

Low

Dull or damaged blades, a worn drive belt or misaligned guide rails. It won’t stop production, but torn loaves can’t be sold as sliced bread and blades get worse with use. Schedule blade and belt service during a slow week.

FREQUENTLY ASKED QUESTIONS

Bakery Equipment Repair FAQ

Answers to the questions we hear most from bakery operators. Don’t see yours? Give us a call.

Do you repair bakery equipment across Cape Cod and Plymouth County?

Yes. Harris Warren repairs bakery equipment throughout Barnstable and Plymouth Counties, Massachusetts, from our office in West Yarmouth. That covers bakeries in Hyannis, Dennis, Falmouth, Mashpee and Sandwich, and across the Cape Cod Canal to Wareham and Plymouth.

Our technicians live across both counties, so a bakery in Wellfleet and one in Plymouth both get a local technician rather than one driving in from off Cape. If your business has locations beyond those two counties, Tech24 can coordinate service there through nearby branches.

Which bakery equipment brands does Harris Warren service?

Harris Warren services equipment from 44 manufacturers, including bakery and oven brands such as Doyon, NU-VU, Moffat, Vulcan, Southbend, Marra Forni, Merrychef and Irinox. That covers deck, rack, convection and combi ovens, proofers, mixers and blast chillers.

If your equipment isn’t from a brand on our list, call anyway. Older and less common bakery equipment is common on the Cape, and our technicians routinely work on units that have been in service for decades.

Should I repair or replace an older bakery oven?

It depends on the oven’s age, how often it fails and whether parts are still available. A common rule of thumb is to consider replacing when a single repair would cost more than half the price of a new unit, or when the same oven keeps failing.

Because Harris Warren sells and installs new equipment as well as repairing it, your technician can give you both numbers: the repair estimate and what replacement would involve. Many solid deck ovens are worth rebuilding; an oven with a cracked hearth or obsolete controls often isn’t.

How should a seasonal bakery prepare its equipment before opening?

Book a startup visit four to six weeks before your opening date. A technician fires every oven, calibrates thermostats, checks igniters and gaskets, and tests proofers, retarders and mixers under load, so worn parts can be ordered before you need them.

Equipment that sat cold and damp all winter often fails in the first week of heavy use. On Cape Cod, that week is usually Memorial Day weekend, when a failed oven costs the most and every service company is busy.

Can you keep a restaurant or resort pastry kitchen running through a busy summer?

Yes. Emergency calls reach a live dispatcher 24/7, and a maintenance plan scheduled around your season reduces the chance of a breakdown in the first place. Most summer failures in pastry kitchens come from equipment running longer and hotter than it did all winter.

For restaurants and resorts, bakery equipment is often one part of a larger kitchen. Harris Warren services the ovens, mixers and proofers along with the cooking line, refrigeration, ice machines and HVAC, so one call covers the whole operation.

What does the 90-day guarantee cover on bakery repairs?

Every Harris Warren repair is backed by Harris-Warren's 90-day guarantee on both parts and labor. If the same problem returns within 90 days of the repair, we come back and fix it at no charge.

The guarantee covers the specific repair performed. It doesn’t cover unrelated failures elsewhere on the unit, which is one reason technicians point out other worn parts they notice during a visit, so you can decide whether to address them now.
